The Ice Cream Maker
Recently, after years of talking about making ice cream, the rubber finally hit the road. I am now the proud owner of a Cuisinart ICE 25 Classic Frozen Yogurt, Ice Cream, & Sorbet Maker. My first attempt was a sorbet that was inspired by one of the recipes from the booklet that accompanied the maker. It was served for dessert when I hosted my book club and was a hit with the ladies! In fact, one who doesn’t do dairy and considers herself a “sorbet connoisseur” said it was some of the best she’d had and asked to take some to go!
Mixed Berry Sorbet
1 1/3 cups granulated sugar
2/3 cup water
2 lbs assorted berries – blueberries, strawberries, raspberries, and or blackberries – fresh or frozen
¼ cup freshly squeezed lime juice
1 tablespoon light corn syrup
Place sugar and water in a saucepan and bring to a boil over high heat. Reduce heat to medium and cook until sugar is dissolved. This is now“simple syrup”. Set aside to cool completely.
Thaw berries if frozen. Place berries and lime juice in a blender and puree until smooth. Pour through a strainer to remove as many seeds as possible. Combine with simple syrup and corn syrup and refrigerate for 2 hours. Remove from refrigerator and follow the instructions on your ice cream maker to complete.
